New Farmers 20196/2020: Wild pig from Monti Sibillini

New Farmers: the CAP and the challanges of European Agriculture. 2019/2020
In Norcia (Umbria region) we meet Valentina Fausti who breeds high quality wild black pigs and makes refined cold cuts from them. Together with her dad Giuseppe and her husband Ciro they breed approximately 150 pigs on 100 hectares of land between pastures and the woods of the Sibillini mountains. Then, simply with the species from this land and the ancient art of norcineria (local pork butchery), Valentina completes the production chain by transforming and maturing the refined meat of this wild pig to make fine cold cuts from it.
